Farmer's Daughter

Although 20+ years removed from the farm, farmer's daughter is still a title I enjoy.
Growing up on a farm taught me many invaluable lessons, two of those being frugality and creativity.
Now as a wife and a mom, I love to put into practice what I learned growing up as a
Farmer's Daughter.

Crock-Roasted Chicken with Rotisserie Rub

Another super easy chicken recipe.

1 broiler/fryer chicken (3 1/2 - 4 lb)
2 Tbsp. paprika
1 1/2 tsp. onion powder
2 Tbsp. garlic powder
1 tsp. salt
1/2 tsp. freshly ground black pepper

Rinse and pat chicken dry (discard giblets and neck). Coat crock pot with cooking spray.

Combine paprika, onion powder, garlic powder, salt, and pepper in bowl. Stir in warm water by the teaspoonful until thick paste forms. Coat chicken inside and out with seasoned paste before placing in cooker, breast side up.

Cover. Cook on low 6 to 7 hours or on high 3 1/2 to 4 1/2 hours, or until internal temperature at thickest part of thigh is 180 degrees.

Remove chicken from crock pot. When cool enough to handle, remove skin and carve.

Servings: 4 Total carbs: 2 g.
